We call that kind of fish a flounder in Texas. I have seen it called a flake fish as well. We love to eat flounder, but my husbands step-father is from the Cayman Islands and they consider it a trash fish. I could never think of it as trash fish, it taste so good. Hope you enjoyed it, it really looks good.

I can attest to your father’s boat making skills. It was well made enough for me me to sit on land without a worry in the world while my boys completely enjoyed Uncle Dave’s rowing skills(even with a raging thunder and rain storm about to come!) The boys had so much fun!! Your father might have to give lessons in boat and kayak building some day, MJ would love to learn.

Between your mom’s garden and your dad’s fishing you should not have to make too many trips to the grocery store. The boats are really incredible. It was so fun to see you and the girls.
